Arsenic content and phenolic compounds in parsley (Petroselinum crispum (Mill.) Fuss) and celery (Apium graveolens L.) cultivated in Vojvodina region, Serbia

Randomly collected samples of parsley and celery from different localities were analyzed to determine their quality based on arsenic concentrations, phenolic constituents the antioxidant capacity edible parts. Arsenic concentrations found in range: root (0.16 μg/g d.m.) < (0.19 leaf (0.35 (0.45 d.m.). Total contents roots similar both species varied significantly depending cultivation site: 5.03-9.18 mg eqGA/g DE 5.04-8.50 celery. Lower total flavonoids content was recorded Among acids, ferulic, chlorogenic several cinnamic acids dominated. Apigenin its glucosides dominated among flavonoids. Based principal component analysis (PCA) it can be concluded that As geographical origin samples. Also, compounds showed a significant contribution PCA clustirng, indicating site has clear impact metabolites profile, while plants did not affect compound profile.
